If one were to parallel off of the intake air temp sensor, coolant sensor, crank teeth sensor and other sensors to two ECUs, would that cause the values to fall outside of the original ECU's ranges, causing miss tuning? Does it distort or diminish the outputs of the sensors? Would only filtration be necessary, or would some kind of booster be needed?

Yes. It would be a major problem since these sensors are part of a voltage divider circuit that is connected to +V and ground. There are ways to do this, but you must figure out the internal bias resistor in the "master" ECU and modify the "slave" ECU.
