I am looking for analogue sound meters. The application, to be installed in phone instruments, one for ear piece & second for mouth piece in the receiver, the needle should move when you & the opposite person speaks, individually.

Phones carry both sides of the conversation on one pair of wires, so separating them out is going to be very difficult. There is going to be no way for a circuit to know who is speaking.
